Easy duck carnitas (with left over duck fat!)

Duck meat deserves to be made into carnitas. It just does.

I had never had duck carnitas before dining at Rosa Mexicano in Ardmore. I don't know whether I was angrier that I had not tried this deliciousness before or joyful that I was experiencing it. Then top that off with the surprise at how easy it is to make at home, my foodie emotions are all over the place.

Duck Carnitas Ingredients

2.5 pds of Duck legs: Duck legs may not be readily available at your market so check out your local butchers and farmers markets.


1.5 Navel Oranges: Both fresh oranges and orange juice work here (1/4 orange juice)


1.29 oz. Carnitas Seasoning Pack: This carnitas seasoning pack is where the EASY comes in. It replaces measuring out each individual seasoning by doctoring up this seasoning pack.


1 Tsp Cinnamon: If you are using a fresh cinnamon stick, use 1 to 2 sticks.


2 Bay Leaves: If you are using dried bay leaves, use 1/4 tsp.


2 Sprigs of Thyme: If you are using dried thyme, use 1 tsp.



Duck Carnitas Step by Step Instructions

Step 1: Carefully wash duck legs


Step 2: In a bowl with the duck legs, squeeze the juice from the wedges (set orange rinds to the side), add carnitas seasoning, and add cinnamon. Give those legs a massage with those ingredients.


Step 3: Lay the duck legs on a greased baking sheet/dish. Add the orange rinds, thyme, and bay leaves to the sheet. Cover and bake for 2.5 hours or until tender.


Step 4: Carefully remove the legs from the baking sheet and strain oil. Keep your duck fat love!


Step 5: Shred duck with two forks or really anything because it will be that tender.


Step 6: Add to tortillas, oaxaca cheese, sear and enjoy your duck carnitas!
